Chicken Fried Rice Recipe
Ingredients:
- 1 1/2 cups white rice, cooked
- 6 oz chicken, cooked and diced
- 1/4 cup low sodium chicken broth
- 2 large eggs, lightly beaten
- 1 teaspoon fresh ginger root, grated
- 1/2 cup onion, diced
- 1/2 cup carrot, shredded
- 1/2 cup frozen peas
- 1 1/2 tablespoons low sodium teriyaki sauce
- 2 tablespoons water
- 2 teaspoons vegetable oil
- white pepper to taste
Instructions:
1. In a mixing bowl, add in the chicken, water, teriya sauce, chicken broth, white pepper to taste and ginger. Combine and mix well then set aside.
2. Heat a nonstick skillet and add in the 1 tablespoon of vegetable oil. Add in the eggs and cook it. Stir until set but make sure it is moist. Remove the cooked eggs to a plate.
3. Add in the remaining 1 tablespoon of vegetable oil then add in the onion and carrot. Stir fry them for 4 minutes until tender.
4. Stir in the rice and peas then cook until the rice begins to brown.
5. Add in the chicken mixture and eggs. Cook for another 5 minutes until heated through.
6. Serve and enjoy!
