Vegetarian Fried Rice Recipe
Ingredients:
- 3 cups cold cooked rice
- 2 eggs
- 1 cup bok choy, coarsely shredded
- 3 green onions, diagonally sliced
- 1 small onion, sliced
- 2 large cloves garlic, minced or mashed
- 2 fresh black mushrooms
- 1 cup chinese snow peas
- 1/4 cup canola oil
- 3 tablespoons soy sauce
Instructions:
1. Heat the wok and add in 1 tablespoon of oil. Add in the green onions, garlic, onions then saute them until the onions are tender.
2. Add in the mushrooms, snow peas and bok choy. Continue sauteeing for another 2 minutes then remove them and place on a plate.
3. Add in 1 tablespoon oil and wait for it to heat up. Add in the eggs and continue stirring until set. Remove the eggs and break them into fine pieces.
4. Add in the remaining oil and cooked rice. Stir fry it until heated through then season it with soy sauce.
5. Add in the cooked vegetables and eggs and toss to mix well.
6. Serve and enjoy!
